Over his 25-year career as a chef, pastry chef and educator, Anthony has championed innovation, sustainability and respect in culinary training. His vocational journey has been shaped by mentors who have inspired his approach to cuisine and education. 

Anthony transitioned into VET through Meridian Vocational College, where he helped establish a training kitchen, café and catering operations. He is now employed as a cookery teacher at Alliance College, where he leads the RTO’s Certificate III in Patisserie program. 

Anthony is no stranger to technology. In consultation with respected chefs, he designs tech-savvy learning resources from the ground up. In 2023 he launched Ed-Spectrum, a digital culinary newsletter that promotes VET through storytelling and research. 

Driven by a passion for inclusive, curiosity-led learning, he uses ethical AI and digital strategies to meet the evolving needs of his students. Anthony is committed to making education meaningful and future-focused.
